I’m going to try something new on the blog today… stepping aside and letting someone special make a post on this site, the first non-Heavey Duty post in fact.  Who is this special person you ask?  Well, I’ll let her explain – in the third person of course, take it away….

 

Primal-Whoopie-Pies-3She’s a pharmacist by day, and by night and early morning, a coach, athlete, gym owner, wife, cook, maid, and mom to the most adorable furry children you’ve ever met.  She was a runner for a number of years before learning the “ways of the barbell”, and has not looked back since.

 

In a traditional sappy fashion, she met and fell in love with her best friend, Heavey Duty in high school, and now enjoys sharing adventures in gym ownership, garage strength and conditioning, and primal cooking with Mr. HD.  Her free time is spent coaching, working out, and tinkering in the kitchen to develop primal recipes to feed Heavey Duty and to satisfy her own sweet tooth.  She is… Mrs. Heavey Duty!

The Primal Velvet Mocha Whoopie Pie!

 

Primal-Whoopie-Pies

 

Whoopie Pies:

 

  • 1/4 c cocoa
  • 1/2 tsp baking soda
  • Primal-Whoopie-Pies-21/4 t salt
  • 5 eggs
  • 2 T. melted butter
  • 1 c. whole milk (or coconut milk)
  • 1/2 tsp lemon juice
  • 1/2 c honey
  • 1 tsp vanilla
  • 1 T. instant coffee granules (optional)

Preheat oven to 350F.  Mix all ingredients together in a large bowl until smooth.  Pour into 12 greased muffin tins and bake for 20 minutes.

Once baked, let pan sit out until cool.

Once cool, carefully remove muffins from the pan and slice horizontally in half. Places halves in freezer while mixing icing.

 

Whoopie Icing:

  • 8 oz. cream cheese
  • 1 scoop of vanilla or chocolate protein powder
  • 2 T kahlua
  • 1tsp vanilla
  • 2 T. honey

Mix above icing ingredients until creamy smooth.

Spread icing on bottom half of the muffin, then replace top to make an icing sandwich.  Repeat with remaining muffins to make 12 “whoopie pie” sandwiches.
